Easy Bean and Cheese Taquitos

These bean and cheese taquitos are seriously so good. Honestly, they melt in your mouth and will leave you wanting to make them again and again! Bonus: these taquitos are perfect for meal prep. We like to make a batch from scratch on the weekend and enjoy them throughout the busy work week.

Ingredients

Taquitos

10 small tortilla shells

1½ cup marble cheese

1½ tsp. taco seasoning

1½ cup homemade refried beans (see instruction below)

Oil for basing taquitos

Optional: Serve with salsa, plain Greek yogurt, shredded lettuce, diced tomatoes


Refried Beans (makes about 1½ cup)

1 tbsp. butter

½ onion, finely chopped

1 large garlic clove, grated

¼ tsp. Chili powder

1 tbsp. chili crunch oil

¼ tsp. ground cumin

1 540 ml (190z) can pinto beans, rinsed and drained

¼ cup water or vegetable broth

¼ cup green onions, sliced

Juice of ¼ lime

Salt and pepper to taste

Instructions

  1. Preheat the oven to 350 degrees
  2. Prepare refried beans. To a sauce pan, heat butter over medium low heat.
  3. Once melted, add onion and garlic and cook until translucent, about 5 minutes
  4. Next, add chili powder, cumin and chili oil and continue to cook, about 1 minute
  5. Add pinto beans and water to the pan and stir to combine
  6. Once some of the liquid has evaporated, begin to crush the beans with the back of a wooden spoon
  7. When beans have been fully crushed, turn off stove and toss in green onions and lime juice. Mix to combine and remove from heat, set aside for later
  8. To a small bowl, mix cheese and taco seasoning and mix to combine, set aside for later.
  9. Begin assembling taquitos.
  10. To a tortilla shell, add 1-2 tbsp bean mixture and a sprinkle of cheese to one side of the shell and gently roll the shell up.
  11. Place folded side down on a lined baking tray and continue with the rest of the tortilla shells, bean mixture and cheese until done.
  12. Bake taquitos for 10 minutes then flip and continue baking for an additional 10 minutes or until golden and crispy
  13. Serve with shredded lettuce, sour cream, salsa if desired. Enjoy!
