Total Time:
40 minutes
Yield:
8-10 waffles

Ingredients

2 cups navy beans*

1¾ cup milk (or water)

2 cups Buttermilk Protein Waffle Mix*

¾ cup shredded cheddar cheese

⅓ cup chives, finely chopped

1 tsp garlic and herb seasoning

Instructions

  1. Preheat waffle iron according to the manufacturer's instructions. Lightly grease the waffle iron plates if necessary.
  2. In a blender or food processor, add navy beans and milk; blend until smooth, scraping down sides as needed.
  3. In a medium bowl, combine waffle mix, cheddar cheese, chives, and garlic and herb seasoning.
  4. Gradually add the puréed beans to the waffle mix, folding just until combined. Be careful not to overmix; a few lumps are okay. If the batter is too thick, add milk 1 tbsp at a time until the desired consistency is reached.
  5. Add ¾  to 1 cup of batter to the hot waffle iron (the amount will vary depending on your waffle iron size). Close the lid and cook for 5-8 minutes, or until golden brown. Repeat with remaining batter.
  6. Serve on their own or topped with butter, a fried egg, smoked salmon and sour cream, or fried chicken.

Notes

Tips:

  • Protein Pancake Mix: Canadian-made Flourish Pancake Mix is our recommendation.
  • Not all garlic and herb seasonings are created equal! Try this recipe with Mrs. Dash or Clubhouse brands!

*Use 2 cups soaked and cooked navy beans or 1 (540 mL) can of navy beans, drained and rinsed.
