Basic Empanadas

Craving comfort with a kick? These empanadas deliver! Flaky puff pastry envelops a savoury, seasoned blend of lean ground beef, onions, and Canadian black beans. Golden-baked to perfection, they're your new go-to for a satisfying snack or meal!

Ingredients

½ lb lean ground beef

1 cup black beans

½ small sweet onion, finely chopped

1 packet taco seasoning 

1 package prepared puff pastry (2 sheets per package), thawed

1 egg, lightly beaten

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Heat a large skillet over medium-high heat. Add ground beef; cook until browned and cooked through, breaking up large pieces with a spoon.
  3. To the beef add black beans, onion, and taco seasoning to skillet; stir to combine. Cook until onion is translucent and beans are heated through, about 4-5 minutes. Remove from heat.
  4. Working with one sheet at a time, unfold puff pastry on a lightly floured surface. Using a 4-inch round cookie cutter, or a similar-sized bowl, cut 4 circles. 
  5. Place a 1-1½ tbsp of cooled beef and bean filling in the center of each pastry circle. Brush half of the pastry with egg wash and gently fold pastry circle in half to form a half-moon shape. Crimp the edges with a fork to seal them tightly.
  6. Repeat with remaining remaining puff pastry sheet. Re-roll leftover dough and cut it into more rounds.
  7. Place empanadas on a parchment-lined baking sheet.
  8. Using a fork, gently prick the top of each pastry to allow steam to escape. Brush each empanada with remaining egg wash.
  9. Bake for 18-20 minutes, or until the empanadas are golden brown and the pastry is cooked through.

Notes

Tips

  • Keep pastry covered with a damp paper towel to prevent it from drying out.
