Creamy White Bean Alfredo Sauce

This creamy and flavourful "Alfredo" sauce is a delicious plant-based alternative, using navy beans as its secret ingredient to create a rich texture without heavy cream. It's perfect for pasta, chicken, vegetables, or as a base for casseroles.

Ingredients

2 cloves garlic

2 cups navy beans*

¾ cup vegetable broth

¼ cup nutritional yeast

1 tbsp lemon juice

1 tsp garlic and herb seasoning

Instructions

  1. In a blender or food processor, add garlic and process until minced; scrape down sides. 
  2. Add navy beans, vegetable broth, nutritional yeast, lemon juice, and garlic and herb seasoning. Blend on high speed until the sauce is smooth and creamy. Scrape down the sides as needed to ensure all ingredients are incorporated.
  3. Transfer sauce to a small saucepan. Heat over medium-low heat, stirring frequently, until warmed through and slightly thickened, about 8-10 minutes.
  4. Serve immediately over your favourite dishes.

Notes

Tips:

  • For a thinner sauce, add additional vegetable broth, 1 tbsp at a time.
  • Not all garlic and herb seasonings are created equal! Try this recipe with Mrs. Dash or Clubhouse brands!
  • Nutritional yeast is key for a "cheesy" flavour without dairy. Don't skip it!
  • Store leftover sauce in an airtight container in the refrigerator for up to 3-4 days. It may thicken slightly upon chilling, so you can thin it with a little water or broth when reheating.

*Use 2 cups soaked and cooked navy beans or 1 (540 mL) can of navy beans, drained and rinsed.
