Creamy Dill Bean & Cucumber Salad

Ingredients

2 cups cranberry/romano beans*

1 English cucumber, halved and sliced

½ cup red onion, quartered and thinly sliced

1 cup finely chopped fresh dill

½ cup prepared creamy dill dressing

Instructions

  1. In a large bowl, combine beans, cucumber, and red onion; toss to combine
  2. Add chopped dill and prepared creamy dill dressing. Gently toss until everything is well coated and the dill is evenly distributed.
  3. For best flavour, cover bowl and chill in the refrigerator for at least 30 minutes before serving. This allows the flavours to meld.
  4. Serve as a refreshing side dish or a light lunch.

Notes

Tips:

  • Make Ahead: This salad can be made a few hours in advance. If making it much earlier, add a little extra fresh dill just before serving for maximum freshness.
  • Add More Protein: For a more substantial meal, consider adding grilled chicken or salmon.

*Use 2 cups soaked and cooked cranberry/romano beans or 1 (540 mL) cans of cranberry/romano beans, drained and rinsed.
