Greek Fish Sheet Pan Bake

This easy sheet pan bake brings the fresh tastes of the Mediterranean to your table with tender fish, hearty Canadian beans, and vibrant vegetables, all tossed in a delicious Greek salad dressing. An entire meal cooked one one pan? Yes please!

Ingredients

2 cups Great Northern beans*

1 pint cherry or grape tomatoes, halved

1 medium red onion, thinly sliced

½ cup pitted Kalamata olives

⅔ cup prepared oil-based Greek salad dressing, divided

1 lb white fish fillets 

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper. Combine Great Northern beans, tomatoes, red onion, and olives directly on the baking sheet. Drizzle with 2-3 tbsp of prepared Greek salad dressing; toss to coat. Spread out in a single layer.
  3. Pat fish fillets dry with a paper towel. Place on the same baking sheet, nestled among the vegetables. Drizzle remaining Greek salad dressing over fish.
  4. Bake 25-30 minutes, or until fish is opaque and flakes easily with a fork, and vegetables are tender. Cooking time will vary depending on the thickness of your fish fillets.
  5. Transfer the fish and vegetable mixture to plates. Garnish with fresh parsley, if desired. Serve immediately.

Notes

Tips:

  • White fish is best for this dish due to its tenderness and flavour. Try cod, tilapia, haddock, or basa.
  • For an extra burst of flavour, you can add a squeeze of fresh lemon juice over the finished dish.
  • If you prefer your vegetables a bit more roasted, you can roast them for 8-10 minutes before adding the fish to the pan.
  • This dish is great for meal prepping. Store leftovers in an airtight container in the refrigerator for up to 2-3 days.

*Use 2 cups soaked and cooked Great Northern beans or 1 (540 mL) can of Great Northern beans, drained and rinsed.
