Miso Beans

This savoury Miso Bean dish offers a comforting and flavourful experience, combining the creamy texture of Great Northern beans with the umami depth of miso, tender baby spinach, and onion. It's a versatile side or light main course.

Ingredients

2 tbsp butter

½ medium sweet onion, finely chopped

1½ cups chicken broth, divided

2 tbsp miso paste

2 cups Great Northern beans*

5 cups fresh baby spinach

Instructions

  1. In a medium saucepan, melt butter over medium heat. Add finely chopped onion and cook, stirring occasionally, until softened and translucent, about 5-7 minutes.
  2. Meanwhile, in a small bowl, whisk miso paste with ½ cup of chicken broth until miso is fully dissolved and smooth.
  3. Add Great Northern beans to saucepan with the softened onion. Pour in the remaining 1 cup of chicken broth and dissolved miso mixture. Stir well to combine.
  4. Bring to a gentle simmer. Cover and reduce heat to low; cook for 10-12 minutes, allowing the flavours to meld and the beans to warm through.
  5. Stir in the fresh spinach. Cook another 2-3 minutes, stirring gently, until the spinach has wilted.
  6. Serve the Miso Beans warm with toasted crusty bread, if desired.

Notes

Tips:

  • This dish pairs wonderfully with steamed rice, grilled fish, or roasted chicken.

*Use 2 cups soaked and cooked Great Northern beans or 1 (540 mL) can of Great Northern beans, drained and rinsed.
