White Bean Caesar Dressing

This unexpectedly creamy White Bean Caesar Dressing will have you second-guessing that store-bought stuff! All the garlicky, lemony tang and umami punch you crave, made surprisingly smooth and satisfying with a secret ingredient, Canadian beans!

2 cups, 8-10 servings

Ingredients

2 cloves garlic

2 cups white beans*

½ cup water

2 tbsp lemon juice

1 tsp anchovy paste

¼ cup grated Parmesan cheese

Instructions

  1. In a blender or food processor, add garlic and process until minced; scrape down sides. 
  2. Add beans, water, lemon juice, and anchovy paste; process until smooth. 
  3. Add parmesan cheese and pulse until combined. Add 1-2 tbsp additional water to thin to desired consistency.
  4. Transfer dressing to a serving bowl or jar. Serve immediately over your favourite greens, or chill for later use.

Notes

Tips:

  • Bean Choice: Any white bean (navy, Great Northern, or cannellini) will work. Choose what you have on hand!
  • Storage: Store the dressing in an airtight container in the refrigerator for 3-4 days.

*Use 2 cups soaked and cooked white beans or 1 (540 mL) can of white beans, drained and rinsed.
